By the end of 2007, Starbucks has announced it will hold the fat in its espresso based beverages and will adopt a new 2 percent dairy standard in its drinks.

The switch from a current 3.25 percent homo milk standard will happen in locations across Canada and the U.S. Customers will still be able to customize their coffee with homo, skim or soy milk.

Denny Marie Post SVP of Global Food and Beverage, Starbucks Coffee Company said "The move to reduced fat milk as our core dairy offering comes directly from our customer's requests, and while they will still have the option to customize their drinks, our standard beverages will now come with fewer calories and less fat".

New York locations will be making the switch to less fat and fewer calories by June 5th, and other locations will gradually follow suit over the next seven months.

The company is considering making the switch outside of North America as well.
